Make Homemade Biryani Masala for Veg Dum Biryani !

So to make homemade biryani masala, first of all we will heat a pan on the gas.

Once the pan is heated properly, we will add 2 Tablespoons of whole coriander seeds and 1 teaspoon of cumin seeds and 2 Sah cumin seeds. If Sah cumin seeds are not available, you can skip them.

After adding Sah cumin seeds, we will add 2 Tablespoons of green cardamom and 5 to 6 big cardamoms. After adding both of them, we will add 3 pieces of cinnamon and 1 teaspoon of whole black pepper and 7 to 8 red chillies, that too whole.

After adding all this, we will add some more ingredients to it so that it tastes good. Now we will add 5 to 6 bay leaves and 2 teaspoons of cloves and at last, add 3 jaberi flowers and mix them all.

After mixing, lower the flame of the gas and fry it well. Fry it till the flavour of the spices starts coming out of it. We do not want them to burn.

Now the aroma has started coming from the spices and the spices have also been fried well. Now we will take it out in a bowl and add some Kasturi Methi to it and mix it and leave it for 3 minutes to cool down.

After leaving it for 3 minutes, our masala has cooled down. Now we will put it in a mixer jar and add 1/2 teaspoon turmeric powder on top and add salt according to the taste and grind it into a coarse powder. We will not make it a fine powder.

Now our coarse powder has been ground. Now we will take it out and put it in a glass or any container. Now our home made biryani masala is ready.

So after making the brini masala, we will now soak the rice. To soak the rice, we have taken 500 grams of Basmati rice. You can use any type of rice and Basmati rice makes fluffy rice.

So we will put the Basmati rice in a bowl and wash it well with 3 to 4 waters so that the dirt is removed. After washing it with 3 to 4 waters, we will add water to it and cover it and leave it for 45 to 1 hour so that our rice gets soaked well and the rice becomes fluffy.

So to make Barista, we will cut an onion into two parts and we do not have to cut these two parts in a long vertical shape but in a horizontal shape

So we have cut it in a horizontal shape and separated it. Now to fry it, we will place a pan on the gas and put 200 grams of refined oil in it and heat it well to 140 degrees or a little more than medium.

So after the oil is heated, we will put the onion in it and fry it while stirring it until it becomes golden brown.

So once it becomes golden brown, we will take it out and put it in a tray with a teaspoon paper so that whatever oil is in it also drains out. And separate it with a spoon and spread it completely so that it does not stick to each other.

So to prepare the magnet of vegetables and spices, we have taken potatoes, carrots, cauliflower, beans and green peas. So we have cut cauliflower, carrots, potatoes and beans in medium size. We do not have to cut them too small otherwise they will get mixed in the biriyani.
Vegetables in Veg Dum Biryani are hard, so we do not have to cut them too small. So after taking the vegetables, we will also use some spices in it.

After taking everything, now to make the magnet, first of all, beat 250 grams of curd well and put it in a bowl.

After adding curd, we will add 3 teaspoons ginger and garlic paste and also add paste of 4 green chillies and also add 2 tablespoons of biriyani masala which we have just prepared.

After adding biriyani masala, we will add 1/2 teaspoon turmeric powder in it. I will add 2 teaspoons of Kashmiri red chilli powder, 1 teaspoon of hot red chilli powder, I will also add 1 teaspoon of coriander powder and salt as per taste.

After adding all these, I will add 2 teaspoons of the oil in which I fried the onions.

After adding the oil, I will add a lot of chopped coriander and mix it well so that it becomes a nice magnet.

After mixing it well, I will add the chopped vegetables.

After adding the vegetables, I will add 80% of the onion barista I made because I still have to add the garnishing and layer.

After adding the barista, I will mix it well with my hands.

How to Cook Veg Dum Biryani!

Now we have already kept water to boil the rice, so now we check it, our water has also boiled well, so we will add tajpat in it, along with green cardamom and 1 chakri and also we will add some more salt in it and mix it

After mixing it well, we will take out the rice which was kept for soaking for 45 to 1 hour from the water and put it in it and mix it and cook on high flame for 1 minute

After cooking on high flame for 1 minute, we will reduce the flame of the gas to medium and cook it again for 4 to 6 minutes because we had soaked the rice for 1 hour, so we do not have to cook it much, we have to cook it only 80%

So after cooking for 4 to 5 minutes, we will put it on a sieve With the help of a spoon, we will take it out and put it in the vegetable layer that we have made and after putting it, we will spread it well. After spreading it, we will put some chopped coriander and some barista in it.

After putting both of them, we will again strain the rice and spread it in the same way and put some saffron and milk water on it and put green coriander and barista and put some ghee.

After putting these, now to give it dum, we will cover it with a cloth from all sides and put a lid on it.

Now we will put a pan on the gas and after placing it on it, we will put some stuffed thing on it and we will cook it on high flame for 5 minutes.

After cooking on high flame for 5 minutes, we will again make the flame of the gas medium and cook for 15 minutes so that our veg dum biriyani recipe gets cooked well.
