Rajasthani Kachori Masala Ingredients

• 200 gms moong dal

• 500 gms gram flour

• 500 gms ghee (you can use refined oil as well)

• 2 tsp cumin seeds

• 2 tsp fennel seeds

• 10 gms fenugreek seeds

• 2 tsp mango powder

• 2 tsp garam masala

• 2 tsp black pepper powder

• 2 tsp cumin powder

• 2.5 tsp hot red chilli powder

• 2 tsp ginger chilli paste

• 2 tsp chopped coriander leaves

• 2 tsp asafoetida powder

• Salt as per taste

• 400 grams flour
• 200 grams semolina
• 3 teaspoons ghee
• 1 teaspoon barley
• 1 teaspoon magraila
• 1 teaspoon grinded coriander
• Salt to taste
• 4 cups water

Step by Step to make Rajasthani Kachori Masala

First of all we will take a bowl and put moong dal in it and wash it well with 2-3 waters so that all the dirt in it gets removed and our moong becomes completely soft

After washing it with 2-3 waters, we will put it in 1/2 cup water and leave it. Now we will put a pan on the gas and put 500 grams of ghee in it. If you do not want to put ghee, then you can also use refined oil, there is no problem.

So now we have put ghee, now we will leave it to heat a little. Now our ghee is hot. Now we will put 500 grams of gram flour in it and mix it well and fry it for 8-10 minutes on medium flame.

After 8 to 10 minutes, we will turn the flame of the gas to low and now we will put our spices in it one by one.

2 tsp cumin seeds, 2 tsp fennel and , 10 gms Kasturi Methi, 2 tsp cumin powder, 2 tsp mango powder for a little sourness and also 2 tsp black pepper powder and 2 tsp red chilli powder for spiciness and also
2 tsp garam masala powder, 2 tsp ginger chilli paste and a little salt as per taste and mix everythin well.

And fry for 5 more minutes so that the masala gets fried well. Do not use water in it at all, the gram flour will become thin on its own.

After frying for 5 minutes, we will take out the 1/2 cup water that the moong dal has kept in it and add it to it and at the same time we will fry for 5-7 minutes more.

You can fry it according to the quantity you have made, so now it has been fried for 5-7 minutes, so take it off the gas and take it out in a vessel.

To make the dough for Rajasthani Kachori recipe, first of all we take a bowl and add 400 grams of flour and 200 grams of semolina in it and beat it once.

Now we will add 1 teaspoon of jain and 1 teaspoon of magraila, 1 teaspoon of grinded coriander and 3 teaspoons of ghee and salt according to taste and mash it a little.

After mashing it a little, add water little by little and knead it well and prepare a good dough. Now our Kachori dough is also ready and it is ready to fry with spices.

For frying Rajasthani Kachori

First of all we will cut the dough into pedas and with the help of our hands we will make a hole like a pit in it and with the help of our palm we will put the moong masala in it and with the help of our palm we will make a ball out of it and put it in the peda and cover it well and roll it in a small size.

Now we will fill all the pedas with stuffing one by one and roll them. Now we have filled them with all the stuffing. Now to fry it we will place a pan on the gas and put oil in it and leave it on high flame for 5 minutes to heat it.

After heating for 5 minutes we will make the flame of the gas medium and now we will put our Rajasthani Kachori one by one in it and fry it well till it becomes golden brown. Now our Kachori has become golden brown, now we will take it out and keep it in a plate.

Now fry all of them like this till golden brown and take them out one by one. So now we have Everything has been fried and taken out and our Rajasthani Kachori recipe is ready. Now we will serve it

Serving and plate

We will put this Rajasthani Kachori in a plate, break it, add some curd, some sweet chutney and some sour chutney to it and serve it by adding some chopped green coriander on top
