Raj Kachori recipe is a crispy and tasty dish filled with sour and sweet chutney.
We get to eat and see it everywhere in India and on every road side. Raj Kachori is made from a mixture of flour and semolina. It is very easy to make this recipe at home. You can make it with the ingredients available in your home. No fancy ingredients are required.
Raj Kachori is the most liked pasta recipe in India. It is famous for its crispiness. We also know Raj Kachori as Khasta Kachori.
Inside Raj Kachori, stuffing made from many types of spices is filled and on top it is garnished with curd and tamarind chutney.
So today we will learn to make this Raj Kachori in a very easy and simple way and after seeing this you will not have any doubts. So without wasting time, first of all let us see the ingredients that what is going to be used.

Ingradients
• 250 gms flour
• 250 gms semolina
• Water 3 cups (as per requirement)
• 150 tamarind
• 1/2 cumin powder
• 5 large potatoes
• 500 ml refined oil
• 1/2 red chilli powder
• 1/2 chaat masala
• 1/2 coriander powder
• 1/2 mango powder
• 1 anar dana
• 1 tsp ginger chilli paste
• 4 tsp curd
• 1 tsp black salt
• Salt (according to taste)
• 1 tsp green coriander
• 1 tsp whole coriander
• 1 red chilli
• 2 tsp sepuri
Learn to make sweet and sour tamarind chutney:-
First of all we will put a pan on the gas and add 2 cups of water in it. When the water starts boiling a little, then we will add 150 grams of tamarind in it.
After adding tamarind, we will cook it for 15 minutes. When it is cooked for 15 minutes, we will check it once whether our tamarind has dissolved well in the water or not. We have to keep the tamarind chutney a little thin because we have to strain it too.

So our tamarind has mixed well with the water. Now we will add 50 grams of jaggery in it and cook for 2 more minutes. Cut the jaggery into it and mix well with the tamarind and our chattani gets a sweet and sour taste.
So now after cooking for 2 minutes, our tamarind is cooked. Now we will add Tadka to it so that the taste increases. So for Tadka, first of all we will put a pan on the gas and add 1 teaspoon of mustard oil in it.
When the oil gets hot, we will add 1 teaspoon coriander seeds and add red chilli powder and fry it for 1 minute and then add it to the tamarind chutney. Now our tadka is also ready.


Now we will filter everything with the help of a sieve and leave it to cool down. If our chattani is a little thin, then it will become fine after cooling down.
So our chutney is ready.

Learn to make Raj Kachori:-
First of all we will take a bowl and in it we will take 250 grams of flour and 250 grams of semolina. Both of them should be kept in the same quantity otherwise the balance of Raj Kachori can be different. You can take as much semolina as you like.
The crispiness in Raj Kachori recipe comes from semolina only, so now we will mix both the flour and semolina well and knead it well by adding water little by little. We will keep it a little tight so that there is no problem in rolling it.
Now we will let this kneaded dough rest for 5 minutes. When it rests for 5 minutes, then we will cut it into medium size pedas. After cutting all the pedas, we will roll them with the help of a rolling pin.


Now we have rolled all the pedas. Now we have to sift them. So for sifting them, we will place a pan on the gas and put 500 grams of refined oil in it. We will heat it
Now our oil is hot, now we will put the rolled Raj Kachori recipe one by one in it and cook the dough well and then strain it. You should cook it only till it turns red, do not cook it too much otherwise it may burn
So our Raj Kachori recipe is cooked well, so we will take it out of the strainer and put it in a plate, then our Raj Kachori is also ready

Learn how to make Raj Kachori Masala Stuffing
To make the masala, first of all we will take a cooker and put 4 big size potatoes in it and also we will put 4 cups of water in it and put the lid of the cooker and let it boil for 5 whistles.
After 5 whistles, we will take it off the gas and open the lid of the cooker and take out the potatoes in a bowl and after adding cold water in the bowl, we will peel the potatoes.
After removing the peel, we will put the potatoes in a bowl and mash them well. After mashing, we will now add the spices one by one.
1/2 cumin powder, 1/2 tsp dry mango powder, 1 tsp red chilli powder, 1 tsp Kasturimathi powder, 1/2 tsp pomegranate powder , salt test according and mix everything well so that our masala gets mixed well with the potatoes.

Now our Raj Kachori masala is also ready, now we will garnish it with chutney and some spices.
Garnishing and Serving
First of all we will break our Raj Kachori a little from the top so that our masala can go inside
After breaking the Raj Kachori a little we will put our stuffing in it. Now we will put curd and sweet and sour tamarind chutney on top.
After putting both of them we will add some cumin powder, some pomegranate seeds and some chopped coriander along with salt and serve it.
