Ingradients
• 300 gms all purpose flour
• 150 mung dal
• Water (as per requirement)
• 3 tsp ghee (refined oil)
• 1 tsp tamarind
• 1 tsp coriander seeds
• 1 tsp hay
• 1 tsp soybean
• 500 gms oil
• 1 tsp cumin powder
• 1 tsp red chilli powder
• 1/2 garam masala powder
• 1 tsp ginger paste
• 1 tsp green chilli
• 40 gram flour
• Salt (as per taste)
Prepare the dough for moong dal kachori
First of all we have to take a bowl and put 300 grams of refined flour in it. After putting the refined flour, we will add ghee and 1 teaspoon of Jawain Magrela and add some salt and mix it.

After mixing it well, now we will add water little by little and make a nice dough. Do not make the dough too tight and do not make it wet. We have to keep this dough of medium type so that our Kachori becomes crispy and crunchy.

Now we will keep this dough on the side for 5 minutes so that our dough sets well, till then we prepare the stuffing of moong dal.
Prepare the moong dal stuffing
Soak this moong dal in water for 3 hours so that the moong dal swells well and you do not have any problem in making its paste
So, we had soaked 150 grams of moong dal in water, now we will take it out of the water and put it in a mixer and make a coarse paste of it


Now to cook this moong dal and add spices full of flavor to it, first of all we will put a pan on the gas, now we will put 2 teaspoons of ghee in this pan and after it melts a little,
we will add 1 teaspoon of coriander seeds, 1 teaspoon of cumin seeds, 1 teaspoon of asafoetida and 1 teaspoon of soybean coarsely ground and add it Fry it for 1 minute,

now then we will add 1 teaspoon of cumin powder, 1 teaspoon of red chili powder and 1 teaspoon of garam masala and 1 teaspoon of ginger paste and along with it add 1 teaspoon of green chopped chili and mix everything. We will fry it for 4 minutes
Fry it on medium flame so that our masala does not burn. Now after frying it for 4 minutes, we will add 40 grams of gram flour and fry it for 2 minutes. Gram flour binds well.


Now we will add our moong dal paste and fry it for 8-10 minutes so that the flavour of all the spices gets mixed in it. Now we will add salt as per taste and mix it.
Now the masala is also ready.

To strain the moong dal recipe
So now our dough along with stuffing is ready
So now we will take our dough which was kept for rest and mix it a little. After mixing the dough, we will cut it into pedas. We will thicken the pedas with the help of our hands.
Now we will make the moong dal stuffing in it into a ball with our hands and put it in the peda and cover it well so that our stuffing does not come out.

Now we will roll this peda into a small size with the help of a rolling pin. So now we will roll all of them one by one.
Now we will put a pan on the gas and put 500 grams of refined oil in it. After the oil gets heated, we will put all of them one by one and strain it.
So our oil is hot, now we will put all of them one by one and cook till they become crispy. When the color of the moong dal recipe turns red, we will take it out. Cook them all like this and serve. We will take it out

Serving and plate
To plate the Moong Dal Kachori recipe, we will first place our Moong Dal Kachori in a plate. Now we will serve it by adding some green chutney and some Mitti chutney on top of it.
