To prepare the dough for kathi roll :-
First of all, we will take 2 cups of flour in a bowl and add 1/2 teaspoon sugar and add 1 teaspoon salt and mix it well. Once it is mixed well, we will add 2 teaspoons of ghee and mix it well with the flour.

We do not have to mix it too much otherwise our dough will not be soft. So now we will add lukewarm water little by little to this mixed flour and knead it.

When the dough comes together, we will take it out of the bowl and place it on a platform and break it well with both our hands or rub it with hands to make it very smooth.

When the dough becomes smooth, we will make a ball of it and keep it in a bowl and apply some oil on it and leave it to rest for 1 hour by covering it with a wet cloth.

When 1 hour is over, take it out from the bowl and stretch it long and make pedas. This peda should neither be made too small nor too big, so we have cut the dough into 5 pedas and given it a round shape

Now apply some more oil on this peda and mix it with your hands and cover it with the help of a wet cotton cloth and leave it to rest for another 10 minutes.

Whenever we make the dough of mayda flour, it is given rest because you must have noticed that whenever you knead the mayda flour immediately and roll it, it becomes sticky because there is gluten in the flour.
Due to which the flour becomes sticky, that is why the flour dough is given rest to stabilize the gluten so that when we make it When rolling out the flour dough, it should not be sticky. While it is resting,

And also add 1/4 teaspoon black salt. After adding salt, we will add 1 teaspoon ginger paste and 1 teaspoon lemon juice and 1/3 teaspoon flour solution in it. Add some salt on top and mix all these well so that we get a good magnet or gravy for Kathi Roll Recipe Paneer.

So now our magnet or paste has been mixed well, so now we have to give a good smoky flavor to it, so we will put a bowl of coal in it and keep it in it, add some ghee and cover it.
immediately so that the smoke of the coal mixes well with our magnet. We have to keep it like this for 3 minutes. We have to cover it and leave it

Now it has been 3 minutes, now remove the lid and take out the coal

Now we will put 250 grams of paneer which I have cut into cubes in this magnet or gravy and put it in this smoky magnet and mix it well with the magnetson with light hands

After mixing it well, we will put a pan on the gas, add some oil in it and let it heat up a little. When the oil gets hot, we will add paneer one by one and fry it on high flame. We don’t have to fry it too much, we just have to fry the paneer a little.

We have to cook it for just 2-3 minutes. After 2-3 minutes, we will use some ingredients i.e. vegetables and spices in it like we will add 1/3 cup long chopped onion and also add 1/3 cup long chopped green capsicum and also add 1/3 cup long chopped tomato.
And on top of it, add 1 teaspoon red chilli powder and 1 teaspoon Kashmiri red chilli powder. Add a little salt and cook it for 2 to 3 minutes so that the taste of onion, capsicum and tomato gets mixed well.

After cooking for 2 to 3 minutes, now it is ready for Kathi Roll. The stuffing is ready.
Now we make lachha paratha from the peda which we had kept aside to rest
Make lachcha paratha from the rested do
So the pedas which we have rested, now we will pick one of them and place it on a stool and roll it with the help of a rolling pin. After rolling it, we will apply some oil on it and add half a teaspoon of flour and mix it on the rolled peda.

After mixing both of them, we will fold it 4 times one by one in a long shape. After folding it in a long shape, we will make a peda again and roll it well with the help of a rolling pin, then we have rolled it.

Now we will place a pan on the gas and heat it a little. After it gets a little hot, we will put the rolled paratha in it and cook it a little from both sides, one by one.

After it gets cooked a little, put oil on it and cook it from both sides so that the paratha becomes crispy.

After the paratha gets cooked with oil, we will take it out of the pan.

After taking it out, now we will put the stuffing of paneer in it for kathi roll recipe. We will put the paratha in a long way and do this stuffing with the help of a knife and put tomato sauce and chaat masala on it and wrap it in paper.
