kaju paneer

Prepare the kaju before making kaju cheese

So to prepare cashews for paneer, first of all we will take 20 to 25 cashews in a bowl and we will take 30 to 35 cashews in another bowl

So after taking cashews in both the bowls, we will add hot water to the bowl in which we have taken 20 to 25 cashews and cover it and leave it for 15 minutes. We have to make a puree of it later.

So now we will fry the 30 to 35 cashews in the second bowl. So to fry the cashews, we will place a pan on the gas and put 2 tablespoons of ghee in it. You should also use ghee only and not oil.
So after putting 2 tablespoons of ghee, we will melt it well so that it becomes hot. When our ghee melts well, then we will put the 30 to 35 cashews in it and Roast well till it turns golden in colour.

We are going to use these roasted cashews in gravy with paneer. So once our cashews turn golden in colour, take them out in a bowl. Now we prepare the paneer as well.

Prepare the paneer and fry it :-

So before frying the paneer, we prepare the paneer. To prepare the paneer, first take 350 grams of paneer and cut it into cubes. You can cut it in any shape.

After cutting the paneer into cubes, we will fry it in the same pan in which we fried the cashews.

So we will put the paneer in the pan and fry it well from all sides by making the flame of the gas medium.

We will fry the paneer well till it turns golden so that it will fry for about 8 minutes. You can fry it as per your requirement.

So once the paneer is fried for 8 minutes, we will take it out from the pan and keep it in a vessel. Now our paneer is also fried. Now we make a puree of cashew paneer.

Make Kaju Puree :-

So now we will make a cashew puree which will go into our gravy So to make the puree we will put 20 to 25 cashews in hot water for 15 minutes and then take them out of the water and put them in a grinder jar and also chop 1 medium sized tomato and add it to it
After adding the tomato we will add some water to it and make a fine puree. Our puree is also ready. Now we just have to make the gravy and cook it by adding cashew paneer to it. So let’s also see how the gravy is made.

Prepare the cashew paneer gravy :-

So to prepare the gravy or masala of Kaju Paneer, first of all we will put a vessel on the gas and put 1 to 2 teaspoons of oil in it. After putting the oil, we will heat it a little.
So after the oil gets heated a little, we will add 1 teaspoon of cumin seeds along with 1 bay leaf, 2 to 3 green cardamoms and 1 piece of cinnamon.
After putting all these, now we will chop 4 medium sized onions and put them in it. After putting the onions, we will mix them and fry them well till they become golden brown.
So after the onions become golden brown, we will add 2 tablespoons of green chilli, ginger and garlic paste in it and mix them well and fry them for 2 more minutes
So, after frying the spices for 8 to 10 minutes, we will add 1 tsp chopped coriander stalk and add it. We will also add the cashew tomato puree that we have prepared.

After adding cashew and tomato puree, we will add 1/2 cup curd. Mix the curd well and add it so that there is not even a drop in it.

After adding curd, we will add salt according to the taste and mix it. We will fry it till its color becomes red and the gravy becomes coarse.

So, after frying it well, now our gravy has become coarse and red in color. Now we will add 1 to 2 cups of hot water. You should also use hot water. After adding water, we will mix it and cook for 3 to 4 minutes
So after cooking for 3 to 4 minutes, we will add the paneer that we have fried and also the cashews that we have fried

After adding both of them, we will add 2 chopped green chillies and also add 1 inch ginger cut into long pieces. After adding these, we will mix it and cook for 5 to 6 minutes. It should not be cooked too much.

So after cooking for 5 to 6 minutes, our kaju paneer is ready. Now let’s serve this kaju paneer.
