Ingredients for making Doodh (Milk) Masala Recipe

• 1/2 cup pistachio nuts

• 1/2 tsp cashew nuts

• 1/4 cup pistachios

• 25 cardamoms

• 1/2 tbsp black pepper powder

• tsp turmeric powder (optional)

• 1 pinch ground nutmeg

• 5 to 6 dried guava leaves

• A little fennel seeds

• 1 litre full fat milk

• 4 tsp sugar.

How To Make Doodh Masala Powder – Step-by-Step With Images

Step 1: First of all, to make the powder of milk masala recipe, we will place a pan on the gas and heat it a little.

After it gets a little hot, we will add 1/2 cup of pistachios and 1/2 cup of cashews and also 1/4 teaspoon of pistachios and fry it while stirring it on medium flame.

Step 2: We don’t have to fry it much. After frying it a little, we will take it out and keep it in a bowl and let it cool down to room temperature.

We have made the powder for the milk masala recipe. We will also use some spices in it like 25 small cardamom seeds, 1/2 tsp turmeric, 1/2 tsp black pepper powder, 5 to 6 rose petals, 1 pinch nutmeg and a little saffron and fennel. We will also use all these in this powder.

Step 3: So after the roasted pistachios and cashews and pistachios cool down, we will put them in a mixer jar and add the spices one by one.

Chop the peel of 25 small cardamoms and add the seeds. Add 1/2 teaspoon black pepper powder, 5 to 6 cloves, a little saffron, grate a pinch of nutmeg and add it. Add fennel and turmeric and grind it well in the mixer.

You have to turn the mixer on and off and grind it. You do not have to grind it in one go. After grinding it well, we can put it in a glass container and store it for 2 to 3 months.

How to make masala milk recipe using masala powder?

Step 4: To make the Doodh Masala recipe, we will put a vessel on the gas and pour 1 liter of full fat milk in it. If you do not have full fat milk, you can use any other milk.

After pouring full fat milk, stir it and bring it to a boil. Keep stirring it in between so that the milk does not stick to the vessel.

Step 5: After the milk comes to a boil, we will add 4 teaspoons of milk masala recipe powder to it. You can also add more or less.

After adding the doodh masala recipe powder, mix it well and cook it till it thickens a little. We will boil about 30% of the milk so that it thickens a little. Cook it on medium flame for 8 minutes. You can cook it according to your quantity.

Step 6: So after cooking the milk with milk masala recipe powder for 8 minutes and also after draining 30% of the milk, its thickness is now fine. We will add 4 teaspoons of sugar in it. You can add it as per your taste.

After adding sugar, we will cook it for 1 to 2 minutes so that the sugar melts well in the milk masala recipe.

Step 7: After cooking it for 1 to 2 minutes, our Doodh Masala recipe is ready. We will put it in a container and cool it at room temperature.

After it cools down, we will cover it well and keep it in the fridge for about 2 hours to chill it.

After 2 hours, take it out and serve it. Take two Kulad glasses and pour it in them. Add some dry fruits on top and serve it.

If you are making it in winter, then serve it firm.

Tips & Tricks – To Make The Best Masala Milk Powder

• Do not fry the dry fruits too much otherwise the fried fruit may become bitter.

• If you do not like sugar, you can use honey in it which will enhance the taste even more.

• Soak saffron in milk and mix it in the powder.

• For children, keep it mildly sweet and less pepper so that there is no problem in their health.

• Keep it in the fridge only after it cools down completely otherwise it may give a bad smell.
