Today I am sharing with you an authentic Amritsari Paneer Bhurji recipe, which you can easily make at home without any fuss.

Step 1:  To make Paneer, first of all, put 1 liter of milk in a vessel and put it on the gas and let it boil on high flame.

Step 2:  After it comes to a boil, we will add vinegar little by little and break it well. Do not add vinegar all at once, add it little by little.

Step 3:  After tearing the paneer properly, we will put it on a sieve over a vessel and put a muslin cloth in the sieve. You can use any cotton cloth. After placing the muslin cloth, we will put the paneer in it and filter it properly.

After filtering it properly, we will leave it like this till we prepare the masala. It will drain out the water on its own.

Step 4: Now to make the masala for the bhurji, we will put a pan on the gas and add 2 teaspoons of butter and 1 teaspoon of refined oil. You can also add only butter. After adding both, we will heat it.

After it is heated properly, we will add 1 teaspoon of gram flour and fry it well on medium flame for 1 to 2 minutes so that when the paneer releases water, it absorbs it.

Step 5: After the gram flour is roasted, we will chop 2 medium onions and add them to it. We will also chop 2 tomatoes and add them. We will also chop 1 to 2 chillies and add them. We will also add 1 inch ginger shred and fry them well for 1 to 2 minutes so that they get cooked a little.

Step 6:  So after frying for 1 to 2 minutes, we will add salt as per taste and also 1/2 teaspoon turmeric powder, along with 1 teaspoon Kashmiri red chilli powder and 1 teaspoon garam masala powder and in the last we will add some hot water and cook it on high flame for 3 to 4 minutes.

Step 7: After it is cooked for 3 to 4 minutes, we will add the crumbled paneer to it and add some chopped coriander and mix it well.

After mixing it well, if it remains dry, then we will add some hot water to it and cook it well on high flame for 2 to 3 minutes.

Step 8: After cooking for 2 to 3 minutes, we will add 1 to 2 teaspoons of fresh cream and a pinch of roasted fenugreek. Both these things are optional. After adding both of them, we will mix them well.

Now our Amritsari Paneer Bhurji is ready.

To serve Amritsar Paneer Bhurji, take it out in a plate and add some green coriander on it, add some chaat masala and put some butter on it and serve it with naan, roti, bread or any dish of your choice
