So first of all, to make spicy chutney, we will put 1 cup mint and 1 cup coriander in a mixer grinding jar. After putting both of them, we will put 1 inch ginger, 2 green spicy chillies and add salt as per taste and add 1 tsp dry mango powder and add as much water as required and grind it in the mixer to make chutney.

The consistency of the chutney should not be too thick and not too thin, so our consistency is absolutely fine, so now our spicy chutney is ready.

To make sweet and sour chutney, first of all we will put a vessel on the gas and put 75 grams of mango powder in it because we have made sweet and sour chutney and after putting mango powder, we will add 750 ml water and mix it well so that there are no lumps left in it.

After mixing it well, now we will add 500 grams of jaggery in it and also salt according to taste and also we will add 1 teaspoon cumin powder, 1 teaspoon dry ginger powder and 1/4 teaspoon black pepper powder, 1/4 teaspoon fennel powder and in the last we will add 1/4 teaspoon Kashmiri red chilli powder and mix it well.

And cook it on medium flame for 10 to 15 minutes so that the color of our chutney and jaggery gets cooked well with the spices.

Now after cooking for 10 to 15 minutes After this we will see how is our consistency, the consistency of our sweet and sour chutney is absolutely perfect, now we will take it out and keep it aside, when it cools down a bit, we will keep it in a container so that it does not get spoiled quickly.

So to make chole or chaat, first of all we will put 250 grams of chickpeas in a bowl and add water to it and keep it overnight so that it can swell well and the taste also comes in it.

So after keeping chickpeas overnight, we will drain its water and put chickpeas in a pressure cooker placed on the gas. After putting chickpeas, we will add 1 big cardamom, 2 bay leaves, 4 to 5 cloves and some baking soda and salt as per taste. Add water up to 1 inch above the chickpeas and close the cooker and let it cook for 4 to 5 whistles on medium flame.

After 4 to 5 whistles, we will take the cooker off the gas and let the gas escape naturally. After it is released properly, we will open the lid of the cooker and see that our chickpeas have boiled well.

So now to add Tadka to it, first of all we will put it in a mortar and pestle. Add 2 green hot chillies, 2 inches of ginger and salt as per taste and grind it well. After grinding it well, we will place a pan on the gas and add 2 teaspoons of ghee and melt it well.

After the ghee melts well, we will add 1 teaspoon cumin seeds and 1/4 teaspoon asafoetida powder and we have coarsely ground chillies and ginger and cook it for 1 minute.

After cooking it for 1 minute, we will add the boiled chickpeas to it. After adding the chickpeas, we will add some spices like 2 teaspoons hot red chilli powder, 2 teaspoons yellow red chilli powder, 1 teaspoon coriander powder and 1 teaspoon garam masala and at last we will add 2 teaspoons tamarind juice.

Now after adding everything, we will mix it well and cook it for 7 to 8 minutes so that our masala gets mixed with the chickpeas and gets cooked well.

After cooking it for 7 to 8 minutes, we will check it once whether the consistency of our chickpeas is fine. If it is too thin, then we will mash some chickpeas and cook it for 1 more minute so that the consistency becomes perfect.

So the consistency of our chickpeas is absolutely perfect. So now turn off the gas and keep the chickpeas aside. Now our chickpeas are ready. Now we will see how to make potato tikki. lets take a look

How to make potato tikki

To make potato tikki, first of all we will take 7 to 8 boiled potatoes. Put the potatoes in a pressure cooker, add water and let it boil for 5 whistles. After the gas is removed from the cooker, open the lid, take out the potatoes, put them in cold water and peel them.

After peeling, take the potatoes in a bowl. We have already taken the potatoes. Now we will grind these potatoes with the help of a grinder. After grinding the potatoes, we will add salt according to the taste and also add 3 to 4 teaspoons of corn flour.

So that our potato bun can be made properly. After adding corn flour, we will mix it well with the potatoes.

After mixing it well, now we will mash it well. After mashing it well, we will make small balls of it and flatten them a little with our hands.

Now to fry it, we will take a pan on gas. We will put it on the pan and add 4 teaspoons of ghee and leave it till it melts

Now our ghee has melted, now we will put the tikki that we have made in it and fry it on both sides on medium flame

We will fry it till it becomes crispy from both sides. So now after frying for 4 minutes, our potato tikki has become crispy from both sides

So now we will take it out from the pan and put it in a plate and fry all of them like this
