Make the masala for Achari Paneer

So to make the masala for Achari Paneer, first of all we will heat a pan on high flame.

After heating it on high flame, we will add 2 teaspoons of fennel seeds and also 1 teaspoon cumin seeds, 1/2 teaspoon mustard seeds and a pinch of fenugreek seeds. We will also add 2 to 3 Kashmiri red chillies cut into pieces.

Now we will fry all these on low flame. After frying it well, we will take it out in a bowl.

After taking it out, we will let it cool down a bit and then we will put it in a grinder mixer and add 2 teaspoons of mango powder, 1 teaspoon chaat masala and a little salt and make it into a coarse powder. We do not want to make a fine powder of it. We have to make it coarse.

So our pickle masala is ready

How to Toss Paneer and Veggies

First of all, we will put a pan on the gas and put 1 teaspoon mustard oil in it and then heat it well.

After the oil is heated properly, we will add 1 teaspoon cumin seeds, 1/4 teaspoon kalonji, 1 teaspoon roughly chopped garlic, 2 to 3 chopped green chilies and mix them all well.

After mixing it well, we will now add 200 grams of paneer cut into cubes and also add some veggies like 1 medium size tomato cut into cubes, 1 medium size capsicum cut into cubes and 1 medium size onion cut into cubes.

After adding all these, we will also add some spices like 1 teaspoon salt, 1 teaspoon turmeric powder, 1 teaspoon Kashmiri red chili powder and also add the pickle masala we have made in it. Add 1/2 teaspoon and mix everything well and cook it for 3 to 4 minutes

After cooking for 3 to 4 minutes, take it out in a bowl and keep it aside

Make the gravy for Achari Paneer Tikka

So now to make the gravy of Achari Paneer Tikka recipe, first of all we will again put a pan on the gas and add 2 teaspoons of mustard oil in it and heat it well.

After it is heated well, we will add 1/2 teaspoon cumin seeds along with 1 pinch of yellow mustard seeds. Now we will add the gravy ingredients in it.

Like chopping 3 big size onions finely, we will add it in it and fry it well till it becomes golden brown.

When our onion becomes golden brown, now we will make 2 teaspoons of ginger garlic chilli paste and add it and fry it a little with the onion so that the rawness of garlic goes away.

After frying for a while, we will add some water in it and mix it. After mixing it, now we will add 1 teaspoon turmeric powder along with 1 teaspoon Kashmiri red chilli powder, and 1/2 teaspoon coriander powder. After this, we will also add 2 teaspoons of the Achari Masala that we have made.

And after mixing everything, we will add some more hot water and cook till the spices start leaving oil from the sides.

So after 10 minutes our masala has started leaving oil from the sides, so now we will make a puree of 2 medium size tomatoes and add it to it and also mix 3/4 cup curd well and add it to it. After mixing these spices well, we will add salt according to taste and cook it well for 10 minutes.

Now after cooking for 10 minutes, the consistency of our gravy has become good. If your consistency has become thick then add some water and cook for 2 more minutes.

So our gravy is absolutely perfect, so now we will add the paneer and veggies which we have sauted in it and add 1 teaspoon cream on top and add 1 inch ginger flakes and add 1/4 teaspoon roasted fenugreek powder and in the end we will add salt to taste. Add salt as per the requirement and mix it and cook it for 5 minutes

After cooking for 5 minutes, add 2 teaspoon chopped coriander and take it off the gas and now we will take it for serving, so let’s see how to serve it

So to serve this Achari Paneer Tikka recipe, we will take it out from the pan and put it in a bowl and sprinkle some green coriander on it and serve it with Naan Roti or Laccha Paratha.

• 1 tsp cumin seeds
• 1 pinch yellow mustard seeds
• 3 large onions
• 2 tbsp ginger garlic chilli paste
• 1 tsp turmeric powder
• 1 tsp Kashmiri red chilli powder
• 1/2 tsp hot red chilli powder
• 1 tsp coriander powder
• 2 tsp achari masala
• Hot water as per requirement
