step 1: How to make Poha Recipe: First of all, take 300 grams of thick Poha in a sieve and add water and wash it well so that the stickiness is removed.

After washing it well, we will leave it in the sieve and let it dry till then we will cut the vegetables.

Step 2: So we will take vegetables and cut them. First of all we will take onion and chop it very finely. Then we will cut potatoes into cubes but in small size so that it does not take time to cook.

Similarly we will cut carrot as well. Along with that we will cut beans and capsicum as well. I have given an image as to how to cut.

Step 3: After cutting the vegetables, now to make Poha, place a pan on the gas and heat it by adding 2 to 3 teaspoons of oil in it.

After the oil is heated properly, add 1/2 teaspoon cumin seeds and 1/2 teaspoon mustard seeds and fry it for 10 to 20 seconds.

Step 4: After frying, add 15 curry leaves, 3 chopped green chilies and 1/4 cup of bedam. This is completely optional. After adding them, stir it well and fry it for 2 to 3 minutes on medium flame.

After frying it well for 2 to 3 minutes, add chopped potatoes and cook it for 4 to 5 minutes on medium flame so that it gets cooked 50 to 60%.
So after 50 to 60% potatoes are cooked, add onions to it and cook it till it becomes light golden brown so that the flavour of onions comes out
So once onions become golden brown, we add all the cut vegetables to it and stir them all, sprinkle some water, cover it and cook on high flame for 3 minutes so that carrots, capsicum and beans also get cooked a little. Cook it only a little so that the vegetables remain crispy

Step 5: So after the vegetables are cooked for 3 minutes, we will add salt as per taste and also add 1/2 teaspoon turmeric powder and cook the turmeric by stirring it for 1 minute.

After it is cooked for 1 minute, we will add poha to it. After adding poha, we will add juice of 1 lemon and 1 teaspoon sugar and also add a lot of chopped coriander leaves. Mix it well and cook it for 1 to 2 minutes.

Step 6: After cooking it for 1 to 2 minutes, now sprinkle some hot water in it, i.e. actually, turn off the gas, cover it and leave it for 5 minutes so that whatever dryness is left in it gets evaporated by the water and makes it soft and it does not stick to the neck while eating.

Step 7: After leaving it for about 5 minutes, now our How to Make Poha recipe is ready. Now we will take it out in a plate and serve it by adding some lemon juice and some green coriander on top, which is very tasty to eat and also becomes a very healthy breakfast.
