So to make Rasmalai juice, first of all we will put a thick layered vessel on the gas and put 1 kg of buffalo milk which is full fat and creamy. If you do not want to put buffalo milk, then you can also put cow milk.

So after putting the milk, we will stir it well and bring it to a boil.

So once it boils, we will reduce the flame of the gas and now we will put some dry fruits in it like 7 to 8 pistachios which we have cut very finely in long shape. Along with this, we will also put 7 to 8 green pistachios in it, we have also chopped them finely in the same way.

After putting both of these, we will put 1/2 teaspoon cardamom powder in it so that it gets a better aroma and the Rasmalai gets a good flavour. When the flavour comes, after adding cardamom powder, we will add saffron for colour.

So we will add 3 or 4 grains of saffron, so that the colour of Rasmalai juice will be exactly like the one in the market.

So after adding saffron, we will mix it well and then cook it for 10 to 12 minutes.

But keep in mind that we should not make it too thick, we should not make it too thin because if it becomes too thick, the juice will not be able to reach inside our Rasmalai and if it becomes thin, it will become like water. So keep in mind that it should neither be too thick nor too thick.

So we have left it to cook for 10 to 12 minutes, but after it cooks for 5 to 6 minutes, we will add 1/2 cups of sugar and mix it well and cook it again

for 5 to 6 minutes. Cook it well for 6 minutes. We have to cook it for 10 to 12 minutes only but add sugar in between.

So now our milk has been cooked well with sugar and dry fruits for 10 to 12 minutes and you can also see that this is a perfect content, you also have to make it like this.

• 1 kg buffalo or cow milk
• 1/2 cup sugar

So to tear the chenna, first of all we will put a vessel on the gas and put 1 kg of buffalo milk in it. I have already told you that you can use cow milk instead of buffalo milk.

So after putting the milk, we will stir it well and bring it to a boil.

So once the milk comes to a boil, we will turn off the gas and leave it for 2 to 3 minutes so that it cools down a bit. If we tear it immediately, then our chenna will also become tight.
While it is cooling, we will take 2 tablespoons of water in a bowl on the side and take 2 tablespoons of vinegar and mix both of them. We will tear the milk with this and make chenna.
So now after keeping the milk for 2 to 3 minutes, to tear it, we will add the mixture of vinegar and water little by little. Do not add it all at once. We will tear it well by adding little by little.
Now After the chenna is torn, we will take a vessel to strain it and keep a sieve on it. After placing the sieve, we will take a muslin cloth in it and put the torn chenna in it so that some of the water of chenna drains out on this side.
So after putting the chenna, we will lift the muslin cloth with our hands and squeeze it lightly to drain out the water. It should not be pressed too much, otherwise the chenna becomes tight and starts breaking.
Once this is done, we will again put it in the sieve and put any heavy thing on it and leave it like this for 10 minutes so that the remaining water also drains out, but we do not have to drain out all the water from it, we have to let 5% moisture remain, that is why we will keep it for just 10 minutes.
So now it has been 10 minutes since we kept it, now we will take a plate and break it into pieces and put it in it. Break it After adding the flour we will knead it

So we will knead it with the upper two sides of our palm so that it becomes smooth. We have to knead it for only 4 to 5 minutes and not to extract ghee from it. So we will knead it for only 4 to 5 minutes.

So we have kneaded it for 4 to 5 minutes but I had kept 5% moisture in it so that we can add 1 teaspoon of flour so that its binding is done very well. So after adding 1 teaspoon of flour we will mix it well.

After mixing it well, now we will give it the shape of Rasmalai. So to give it the shape of Rasmalai, we will take a left piece from it and by placing it between our hands, we will first give it a round shape and while giving the round shape, we will press it with the palm of our hands and slap it.
So you can see that it is very smooth. It is made well, we will make all of them in the same way and now we will make syrup to cook it, so let’s see how the syrup is made.

Ingredients for making Rasmalai Chena

• 1 cup milk (buffalo or cow)
• 2 teaspoon water
• 2 teaspoon vinegar
• 1 muslin cloth

So make the Rasmalai syrup and cook it

So to make syrup, first of all we will put a pan on the gas and keep the flame of the gas on medium.

So after putting the pan in it, now we will put 1. We will add 5 cups of sugar and we will also add 6 cups of water to it. Remember, after adding sugar and water, we will mix it well and after mixing it, we will cook it on high flame for 3 minutes.

So now after cooking for 3 minutes, we will add all the ingredients one by one to the Rasmalai we have prepared and cook it on high flame for 2 to 3 minutes so that it swells a little.
So now after cooking for 2 to 3 minutes, you can see that it has started to swell a little. So now we will cover it and cook it on high flame for 10 to 12 minutes so that our Rasmalai gets cooked well and swells.
While the Rasmalai is cooking, we will keep a bowl with very chilled cold water and some ice in it so that as soon as the Rasmalai gets cooked, we will take out the Rasmalai and put it in it so that the Rasmalai gets a shock. And it will hold its shape very well and will maintain its shape
So now after 10 to 12 minutes of cooking, Rasmalai is completely ready. Now we will take it out and put it directly in the chilled and cold water kept on the side.
