To make the dough of Balushahi, we will take 1 kg of flour in a plate and add one third of ghee in it and knead it well with our hands so that it does not become like a dough.
After mixing it well, we will add some salt as per taste and add some curd and mix it well with the palms of both our hands. We do not knead it too much otherwise it will become crispy.





After mixing it with our palms, now we will add some cold water in it and mix it well and make a good dough. We do not have to keep the dough too wet nor too tight.



So after making the dough well, we will cover it with a cloth to rest it and keep it for 15 minutes so that it sets well and our Balushahi can be made well. We give rest to the dough so that it does not become sticky and it gets cooked well.

Make syrup of bearberry
So to make Balushahi’s syrup, we will put a vessel on the gas and add 2 cups of sugar in it and we will also add the same amount of water as the sugar, so we will add 2 cups of water and mix it


After mixing it well, now we will add some saffron in it and we will also add 2 to 3 cardamoms so that it gets a good color from the saffron and the taste of cardamom is good, after adding both, we will leave it to cook

How to fry balushahi dough
So now our dough of BaluShahi has set well after 15 minutes. Now we will take it and cut it into pieces and place it on the palm of both our hands and make it in the shape of a ball.


After making it in the shape of a ball, we will make a hole in the middle of it on a table or on our hands with our fingers so that when our Bhalu Sahi is fried properly, it gets fried well from inside and its shape is also like this.

We will make all of them with our hands like this. Now to fry it, we will place a vessel on the gas and put 500 grams of refined oil in it and heat it well. We will heat it on high flame.After frying it properly, we will take it out through a sieve or mesh like colanderAnd we will check the bowl that was kept on the gas for making the syrup to see if our syrup is ready or not

So after cooking for 10 minutes, our syrup is ready. So, we will put the fried Bhalusahi in it and dip it well so that the syrup reaches inside it properly.
