Introduction For Veg Biryani

Prepare Paneer Stuffing for Paneer Veg Biryani Recipe
So to make stuffing of paneer, first of all we will take a bowl and put 1 tsp oil in it and add 1 tsp Kashmiri red chilli powder and 1 tsp ghaniya powder in it
Along with this we will add 1/2 tsp cumin powder, half tsp black salt, 1 tsp roasted fenugreek and 1 tsp cardamom powder. After adding these, we will add 1/4 tsp turmeric powder and 1/2 tsp garam masala. After adding this, we will add 6 tsp hung curd and 1 tsp lemon juice and add some salt and mix all these well and make a magnet.




So our magnet is ready. Now we will put 500 grams of paneer cut into cubes in this magnet and mix it well with our light hands.


After mixing it well, we will add smokey oil in it. To give flavour, put 2 pieces of hot coal in a bowl and add 1 tsp ghee in it and cover it for 3 minutes so that the smoky flavour mixes well with the paneer



We will also use some vegetables in this paneer veg biriyani recipe like chop 1 large onion into cubes and fry capsicum cut into cubes

So now after 3 minutes, remove the lid and take out the coal. Now it has smoky flavour

Now to fry the paneer with this magnet, put the pan on the gas and add one tsp ghee in it and heat it a little
After the oil is heated, we will add our paneer one by one and cook it well from both sides. Make sure that it does not stick to each other. We will fry it on high flame for 6 to 7 minutes.
After frying for 6 to 7 minutes, we will take it out from the pan. You can fry all of them in the same way.




Now, in the same pan, we will add the onion and capsicum cut into cubes to the paneer magnet we made and mix it and put it in the pan. Sauté it for 3 minutes on high flame.
After sautéing for 3 minutes, we will turn off the gas and take it out in a vessel. Now our paneer stuffing is ready.

Now how will you wash the rice?
So to make rice for Veg Biriyani, first of all we will put 500 grams of Basmati rice in a bowl and after adding water in it, we will wash it with our hands gently. We will wash it with 4 to 5 waters so that all the dirt and starch is removed.


After washing it with 4 to 5 waters, we will add water in it and keep it for 40 to 50 minutes.
Now after keeping the rice with water for 40 to 50 minutes, now we will put a cooker on a gas to boil it and add 5 cups of water in it and also add some whole spices in it.



Like we will add a little more salt and also add 2 bay leaves, 4 cardamoms, 1 chakri i.e. star along with 3 to 4 logs, 1 piece of cinnamon and 4 black peppers and leave it with water till it boils.
Till then we will prepare another stuffing

Make masala for veg biriyani
To make the masala, we will finely chop 4 medium-sized onions in long shape and to cook it, we will heat a vessel on the gas.
After it gets heated, we will add 3 teaspoons of oil in it and heat it a little. After the oil gets a little hot, we will add 4 finely chopped onions in it and mix it well.
After mixing it well, we will fry it till it becomes golden brown. After it becomes golden brown, now we will add 2 teaspoons of ginger-chilli paste in it. Along with it, add 1 teaspoon of turmeric powder and 1 teaspoon of red chilli powder and mix it well.





After mixing, we will add some hot water in it and cook it a little.


After it gets cooked a little, we will grind 1 tomato and add it in it and mix it and cook on high flame for 2 to 3 minutes.
After cooking for 2 to 3 minutes, now we will take 200 grams of curd and add 2 teaspoons of it. Add the biriyani masala and mix it. After mixing, we will add it to it and mix both of them well and fry it on high flame for 5 minutes.
Now after our masala is fried for 5 minutes, we will turn off the gas and keep it in a container.




Now we will add the paneer stuffing that we had made in this masala one by one and also add the sautéed onion and capsicum to it and also add 2 teaspoons of chopped coriander leaves.
So now our first layer of paneer veg biriyani recipe is ready. So now we cook the rice.



How to put rice in boiled water
The water which we had kept on the gas, after adding the whole spices, has started boiling well. Now we will put the rice which we had kept in water for 40 to 50 minutes in it.
If you soak it in water for 40 to 50 minutes, then cook it for only 10 minutes.

Now it is ready for making our damb. So damb For applying, we will take a big cotton cloth. If you want, you can also use flour. Now we will make a circle around the cloth and cover it with a lid.


Now we will put a pan on the gas and put it on it and keep some heavy thing on top and cook it on low flame for 10 minutes.
After cooking for 10 minutes on high flame, we will reduce the flame of the gas and cook it for another 15 minutes.
